Medallions of Pork with Lemon Recipe

Medallions of Pork with Lemon Recipe - 4 servings


1 1/2 tablespoons olive oil

3 cloves garlic

1/4 teaspoon powdered rosemary

1 pound lean boneless pork tenderloins, thinly sliced

2 1/2 tablespoons fresh lemon juice

1/4 teaspoon salt

1/4 teaspoon black pepper


In a blender, combine olive oil and garlic. Add rosemary and whirl 1 minute more. Arrange pork tenderloins in an 8 x 8 x 2-inch casserole. Pour marinade over pork and marinate in refrigerator 1-2 hours. Drain off marinade thoroughly. Heat a nonstick skillet. Add tenderloins and brown 2 minutes on each side. Reduce heat, add lemon juice and cook, turning often, 3-5 minutes more or until pork is cooked. Season with salt and pepper.
