Old-Fashioned Meat Loaf Recipe

Old-Fashioned Meat Loaf Recipe - 8 servings


1 teaspoon extra-virgin olive oil

1 large yellow onion, finely chopped

2 pounds leanest ground beef

1 1/2 cups bread crumbs

2 eggs, lightly beaten

1 teaspoon salt

1/2 teaspoon pepper

1 teaspoon dry mustard

1/4 teaspoon ground thyme

1/4 cup finely chopped fresh parsley

1/2 cup evaporated skim milk


In a nonstick skillet, heat olive oil over medium-high heat. Add onion and saute until slightly soft, 4-5 minutes. In a large bowl, combine ground beef, bread crumbs and sauteed onion. In a medium bowl, whisk together the eggs, salt, pepper, dry mustard, thyme, parsley and milk. Pour the egg mixture over the beef mixture. Using your hands, mix the ingredients together. Do not overmix or loaf will be too dry. Pat meat mixture into a 5 1/2 x 9 1/2 x 2 1/2-inch loaf pan. Bake at 350oF for 1 1/2 hours or until meat loaf begins to shrink from sides of the pan. Cover pan with foil for the first 1/2 hour of baking. Then remove cover for the last hour. Remove from oven and let cool 5-10 minutes so the slices won't fall apart. Cut meat loaf into thick slices.
