Lamb with Garlic Recipe

Lamb with Garlic Recipe - 8 servings

Ingredients:

3 pounds leg of lamb, boned and butterflied

1 tablespoon minced parsley

1 tablespoon ground sage

1 tablespoon powdered rosemary

2 teaspoons olive oil

2 tablespoons fresh lemon juice

1/2 teaspoon salt

1/4 teaspoon black pepper

8 cloves garlic, thinly sliced

Method:

Rub lamb on all sides with parsley, sage and rosemary. In a bowl, combine olive oil, lemon juice, salt and pepper. Pour over seasoned lamb and rub into meat. Insert sliced garlic cloves in cracks and crevices. Prepare coals and cover the grill with foil. Place the lamb on very hot grill. Turn every 10 minutes for a total cooking time of about 30 minutes for rare and 45 minutes for well done. Rare will register 160oF on a meat thermometer, well done, 175oF. Just before serving, cut lamb into slices 1/2 inch thick and arrange on a platter.
