Grilled Veal Steaks with Fresh Lemon and Mushrooms Recipe - 4 servings


1 pound veal round steaks, pounded very thin

1 teaspoon olive oil

1/2 cup dry white wine

1 tablespoon fresh lemon juice

1 pound fresh mushrooms, thinly sliced

14-ounce can water packed artichoke hearts, quartered

2 lemons, cut into quarters


Grill veal over hot coals or broil on a rack 3 inches from heat. Turn when juices begin to form on top of meat, cook 3-4 minutes longer, or to desired doneness. While meat is cooking, combine olive oil, wine and lemon juice, pour half of the mixture into a skillet and heat. Add mushrooms and saute, add artichokes during the last few minutes of cooking. Remove mushrooms and artichokes to a platter, cover to keep warm. Quickly heat remaining sauce. Garnish veal with mushrooms and artichokes, squeeze lemon over, drizzle with wine sauce.
