Country Pot Roast Recipe

Country Pot Roast Recipe - 6 servings


1 1/2 pound chuck roast

28-ounce can plum tomatoes, diced

2 teaspoons caraway seeds

1/2 teaspoon salt

2-3 drops Tabasco sauce

1 bay leaf

1/4 teaspoon pepper

4 potatoes, peeled and quartered

6 carrots, peeled and quartered

6 celery stalks, peeled and quartered

4 small onions

12 fresh mushrooms


Brown meat in a small amount of liquid from the plum tomatoes, drain, if necessary, to remove any excess fat. Add tomatoes and seasonings. Cover and simmer 1 1/2 hours, add potatoes, carrots, celery, and onions. Cover and simmer about 1 hour, or until vegetables are crisp-tender. Add mushrooms and simmer 15 minutes.
