Stir-Fried Scallops with Shrimp Recipe - 4 servingsIngredients: 1/2 pound medium shrimp 1 1/2 teaspoons extra-virgin olive oil 2 garlic cloves, minced 1/2 pound sea scallops 1 bunch fresh Italian flat-leaf parsley 2 fresh lemons, cut into wedges |
Method: Peel and devein shrimp, leaving tails on. In a nonstick skillet, heat olive oil over medium-high heat. Add garlic and scallops, and saute 2-3 minutes on each side, add shrimp and cook 2 -3 minutes longer, or until scallops and shrimp are cooked. Serve on a parsley-lined platter. Garnish with lemon wedges. |
