Stir-Fried Calamari Recipe

Stir Fried Calamari Recipe - 4 servings


1 1/2 pounds squid bodies

1/2 teaspoon plus 1 tablespoon rice vinegar

1 egg white

1/4 teaspoon salt

1/4 teaspoon granulated sugar

1/4 teaspoon black pepper

3 tablespoons Chicken Stock

3/4 pound snow peas

1 piece gingerroot, peeled and thinly sliced

2/3 cup julienne bamboo shoots

1 teaspoon sesame oil


Clean squid, cut into 1/2 inch rings and place in a bowl. In another bowl, combine 1/2 teaspoon of rice vinegar, 1/2 teaspoon of cornstarch and egg white with wire whisk, pour over squid. Let stand 20 minutes. Combine the remaining tablespoon rice vinegar, salt, sugar, pepper, and remaining 1/2 teaspoon cornstarch, set sauce aside. In a nonstick skillet over medium heat, stir-fry squid 3-5 minutes, or just until color changes. Set aside. In a covered vegetable steamer basket over boiling water, steam snow peas gingerroot and bamboo shoots 2-3 minutes, or until snow peas are just crisp-tender. Drain any excess moisture. Remove gingerroot. Add steamed vegetables and sauce to squid and stir fry 2-3 minutes, or until sauce thickens. Stir in sesame oil.
