Steamed Sea Bass Recipe

Steamed Sea Bass Recipe - 4 servings

Ingredients:

1 pound sea bass fillets

1 tablespoon rice vinegar

2 shallots, peeled

1 small gingerroot, peeled

1 tablespoon peanut oil

2 tablespoons reduced-sodium soy sauce

1 cup dry white wine

1 bunch fresh cilantro

Method:

Marinate bass in rice vinegar 20 minutes. In a blender or food processor, chop shallots and gingerroot (do not puree). In a medium saucepan, heat peanut oil. Add gingerroot and shallots, and stir fry 3-4 minutes. Reduce heat to simmer. Add soy sauce and keep warm over low heat. Pour wine into a fish poacher or saucepan. Insert a rack or a vegetable steamer basket. Arrange bass on top of rack or in basket. Cover and steam 5-10 minutes, or until bass flakes easily when tested with a fork. (If additional moisture is needed during cooking, add more wine or hot water). Line a heated platter with cilantro. Layer bass over cilantro. Pour sauce over fish.
