Skewered Scallops with Garlic and Tomatoes Recipe - 1 servings

Ingredients:

1 pound fresh scallops

Juice of 2 limes

10 cloves garlic, peeled

10 cherry tomatoes

1 bunch fresh spinach

1 fresh lemon, cut into wedges

1 fresh lime, cut into wedges

Method:

Marinate scallops in lime juice for 3 hours. On skewers, alternate scallops, garlic and tomatoes. Prepare coals. Cover the grill grid with foil. Grill scallops brochettes over hot coals, turning frequently, 8-10 minutes or until scallops are tender. While seafood is grilling, wash and trim spinach, shake off excess moisture. Cook, covered, in a nonstick skillet 1-2 minutes, of just until leaves begin to wilt (no additional moisture is necessary because of the moisture in the spinach and on the leaves) Arrange spinach on a heated serving plate. Layer brochettes over spinach. Garnish with lemon and lime wedges.
