Seafood with Vermouth and Orange Sauce Recipe - 4 servingsIngredients: 1 pound fillet of halibut, red snapper, cod, sole, or other white fish 2 teaspoons olive oil 1/2 cup fresh orange juice 1/2 cup dry vermouth 1 orange, thinly sliced for garnish Watercress for garnish |

Method: Rub fish with olive oil. Heat orange juice and vermouth just to boiling, reduce heat and simmer 2-3 minutes. Pour over fish. Bake uncovered at 450oF for 15-20 minutes, basting frequently. When fish is done, pour juices into a saucepan, boil 3-4 minutes to reduce. Spread a serving plate with orange slices, top with fish. Cover with sauce. Garnish with watercress. |
