2 teaspoons extra-virgin olive oil

3 large cloves finely minced garlic

1 pound large shrimp, peeled and deveined, tails left on

2 tablespoons finely chopped Italian flat-leaf parsley


In a nonstick skillet, heat olive oil. Add garlic and cook over medium-high heat for 1 minute. Add shrimp and cook 3-4 minutes. Turn, sprinkle with parsley and cook 3 minutes more, or until opaque. Serve with rice.
