Sardines with Redcurrants Recipe - 4 servings


2 tablespoons redcurrant jelly

Finely grated rind of 1 lime

2 tablespoons medium dry sherry

450 g fresh sardines, cleaned and heads removed

Sea salt and freshly ground black pepper

Lime wedges, to garnish


To serve:

Fresh redcurrants

Fresh green salad


Preheat the grill and line the grill rack with tinfoil 2-3 minutes before cooking. Warm the redcurrant jelly in a bowl standing over a pan of gently simmering water and stir until smooth. Add the lime rind and sherry to the bowl and stir well until blended. Lightly rinse the sardines and pat dry with absorbent kitchen paper. Place on a chopping board and with a sharp knife make several diagonal cuts across the flesh of each fish. Season with sardines inside the cavities with salt and pepper. Gently brush the warm marinade over the skin and inside the cavities of the sardines. Place on the grill rack and cook under the preheated grill for 8-10 minutes, or until the fish are cooked. Carefully turn the sardines over at least once during the grilling. Baste occasionally with the remaining redcurrant and lime marinade. Garnish with the redcurrants. Serve immediately with the salad and lime wedges.
