Roast Halibut on a Bed of Fennel Recipe

Roast Halibut on a Bed of Fennel Recipe - 4 servings

Ingredients:

1 pound fillet of halibut, red snapper, cod, sole

or other white fish

2 teaspoons olive oil

2-3 green onions, finely chopped

1 bunch fresh fennel

Method:

Brush fish with olive oil, cover with lemon juice. Sprinkle with green onion. Slice fennel lengthwise and place fish on top. Roast uncovered at 375oF for 10-20 minutes, or until fish flakes.
