Poached Scallops Recipe - 4 servings

Ingredients:

3 tablespoons dry white wine, vermouth or fresh lemon juice

1 pound scallops

Method:

In a nonstick skillet, heat wine, vermouth or lemon juice. Add scallops. Cover and poach 4-6 minutes, or just until scallops are tender.
