Poached Salmon with Lemon Recipe

Poached Salmon with Lemon Recipe - 4 servings


1 pound salmon fillets

1 cup white wine

Juice of 2 fresh lemons


In a fish poacher or saucepan, combine salmon with wine and lemon juice. Cover. Bring to a boil (do not boil). Reduce heat and simmer 5-10 minutes, or just until fish flakes easily when tested with a fork. (If more moisture is needed, add additional wine or lemon juice).


Fish oil, rich in cholesterol-lowering Omega 3's, provides almost all the fat in this recipe. For this reason, don't be concerned with the relatively high fat content.
