Mussels Italian Style Recipe |

Mussels Italian Style Recipe - 4 servingsIngredients: 5 dozen mussels 1 leek including greens, chopped 1 medium onion, thinly sliced 1 large garlic clove, halved 1 1/2 cups dry vermouth 3/4 cup water 1/2 teaspoon salt, or to taste 14 1/2 ounce can plum tomatoes, diced 1 tablespoon olive oil 1/4 cup chopped fresh parsley |
Method: Scrub mussel shells with a wire brush. Remove and discard beards. Rinse mussels in cold water, discard broken or open mussels. Place mussels on a rack in a steamer or Dutch oven, add leek, onion, garlic, vermouth, water and salt. Cover tightly and steam over medium-high heat for 6 to 8 minutes, or just shells open. Remove to a serving dish and cover to keep warm. Boil cooking liquid for 2 to 3 minutes to reduce. Add tomatoes and olive oil. Heat to serving temperature. Pour sauce over mussels. Sprinkle with parsley. |
