Mushroom-Stuffed Salmon Recipe

Mushroom-Stuffed Salmon Recipe - 10 servings


2 tablespoons sake

1 tablespoon sesame oil

1 tablespoon olive oil or canola oil

3 tablespoons reduced-sodium soy sauce

1 jalapeno pepper, seeded and coarsely chopped

2 ounces fresh ginger, peeled and chopped

6 cloves garlic

1 whole salmon, about 3 pounds

1 onion, sliced

1 7-ounce package dried forest mushrooms (shiitake), reconstituted in water until softened

1/3 pound button mushrooms, sliced


In a blender or food processor, combine sake, sesame oil, olive oil, soy sauce, jalapeno pepper, ginger and garlic to make a marinade. Arrange salmon on aluminum foil. Stuff inside cavity to bulging with onion and mushrooms. Fold foil around salmon to form a bowl. Pour marinade over fish. Wrap fish in two thickness of foil. Bake at 425oF or grill over hot coals (preferably with lid down) 30-40 minutes or until fish is just cooked.
