Grilled Salmon with Fresh Fennel Recipe - 4 servings

Ingredients:

1 pound salmon fillets

1 cup skim milk

1/2 pound fresh fennel greens

1/2 fresh lemon

1/2 fresh lime

Black pepper to taste

Method:

Arrange salmon in a 9 x 13 x 2-inch pan. Cover with milk (milk gives moisture to fish without leaving a milk taste). Layer some of the fennel greens over and under the fish. Let stand 30 minutes. Cover the grill grid with foil and prepare coals. Cover foil generously with some of the remaining fennel. Arrange salmon over fennel. Cover with additional fennel. Grill salmon 6-7 minutes, depending on the freshness and thickness of the salmon. Turn. Grill 2-3 minutes, or until fish flakes easily when tested with a fork. Line a heated serving platter with fennel. Arrange salmon over fennel. Squeeze lemon and lime juice over fish. Sprinkle with black pepper.
