Grilled Swordfish Steaks Recipe - 4 servings



2 teaspoons extra-virgin olive oil

1/4 cup fresh lemon juice

2 garlic cloves, minced

1 tablespoon minced parsley

1 1/2 tablespoons fresh rosemary sprigs


1 pound swordfish steaks (about 1 inch thick)

Fresh rosemary and thyme sprigs for garnish (optional)

1 lime, cut into wedges

1/4 cup pitted and chopped Calamata olives (optional)

2 teaspoons capers (optional)


Prepare grill. In a small bowl, combine the marinade ingredients. Arrange swordfish in an 8 x 8 x 2-inch casserole. Pour marinade over swordfish and marinade at room temperature for 15 to 20 minutes. When grill is hot, brush it with oil. Remove swordfish from marinade and place on grill. Grill, turning once, until just cooked, about 9 to 10 minutes. Place swordfish on a bed of fresh herb sprigs, if desired. Garnish with lime. Sprinkle with olives and capers.
