Grilled Sweet and Sour Shrimp Kabobs Recipe

Grilled Sweet and Sour Shrimp Kabobs Recipe - 4 servings

Ingredients:

1 large red pepper

1 large yellow pepper

1 large green pepper

1 medium white onion

1 medium red onion

1 pound large shrimp

1/4 cup extra virgin olive oil

1 1/2 teaspoons balsamic vinegar

2 tablespoons fresh lemon juice

4 garlic cloves, chopped

2 tablespoons chopped fresh basil leaves

12 cherry tomatoes

1 cup fresh or canned pineapple chunks, drained

Method:

Prepare grill. Wash peppers and remove seeds, cut into 2-inch chunks. Peel onions, cut into 2-inch cubes. Shell and devein shrimp, pat dry. In a shallow bowl, combine olive oil, vinegar, lemon juice, garlic and basil. Add peppers, onions and shrimp, marinate 20-30 minutes, turning each two or three times to coat with sauce. Thread shrimp, vegetables, tomatoes and pineapple onto metal skewers. Grill over hot coals 8-10 minutes, turning frequently, until shrimp turn pink and are cooked.
