Green Peppercorn Salmon Recipe

Green Peppercorn Salmon Recipe - 1 servings


2 tablespoons fresh lime juice

2 tablespoons green peppercorns

1 pound fresh salmon fillets

2 fresh limes, sliced into rounds


In a blender or food processor, combine lime juice and peppercorns. Process 2-3 minutes, or until peppercorns are crushed. Place salmon in a dish and arrange lime slices over and under it. Cover with lime juice and peppercorn mixture and marinate 30 minutes. Prepare coals. Cover the grill grid with foil. Layer 1/2 of the lime slices on top of foil. Arrange salmon with skin side up over limes. Cover salmon with remaining lime slices. Grill 5-6 minutes. Turn. Grill 2-3 minutes, or until salmon flakes easily when tested with a fork.
