Fish of Sole with Cheese Recipe

Fish of Sole with Cheese Recipe - 4 servings


1 medium white onion, chopped

2/3 pound fresh mushrooms, sliced

1 cup grated part=skim mozzarella cheese

1 pound fillet of sole


In a covered vegetable steamer basket over boiling water, steam onions 3 minutes. Add mushrooms and steam 2 minutes. In a shallow baking dish, layer half the onions, then half the mushrooms, then half the cheese. Arrange the sole over the cheese. Top sole with remaining onions, then mushrooms, then cheese. Bake at 400oF for 20-25 minutes, or until cheese is melted and fish flakes easily when tested with a fork.
