Calamari Seviche Recipe - 4 servings


1 pound squid bodies

1 teaspoon olive oil

2 large beef steak tomatoes, cut into 3-inch cubes

3/4 medium red onion, coarsely chopped

2 tablespoons diced jalapeno peppers

3 cloves garlic, peeled

1/4 cup rice vinegar

1/4 cup fresh lime juice


Clean squid. Slice into 1/3 inch rings. Toss with olive oil. In a nonstick skillet, sauté squid 3-4 minutes, or until color changes and squid are cooked. Plunge into ice water. Drain. Pat dry. Combine squid, tomatoes, onion, jalapeno peppers and garlic. Toss with rice vinegar and fresh lime juice. Chill 2-3 hours.
