Tomato Vinaigrette Recipe

Tomato Vinaigrette Recipe - 3/4 cup


1/2 pound ripe tomatoes, chopped

3 garlic cloves, chopped

1 shallot, chopped

1/4 cup Chicken Broth

1 tablespoon olive oil

2 tablespoons tomato paste

1 tablespoon chopped fresh basil

1/4 teaspoon pepper

3 tablespoons balsamic vinegar

1/4 cup chopped fresh basil


Combine tomatoes, garlic, shallot, chicken broth, olive oil, and tomato paste in a medium saucepan. Heat just to boiling, but do not allow to boil. Reduce heat and simmer 20-30 minutes, stirring frequently. Pour mixture into a food processor and puree. Add basil, pepper and balsamic vinegar. Chill. Just before serving, add 1/4 cup chopped fresh basil, if desired.
