Pesto Recipe

Pesto Recipe - 2 2/3 cups


5 cups fresh basil*

8 cloves garlic

1 teaspoon salt

1/2 cup pine nuts

3/4 cup olive oil


Combine basil, garlic, sat and pine nuts in a blender and puree. With machine running, add olive oil 1 tablespoon at at time. Blend until smooth and oil is absorbed.


*To freeze fresh basil, place the basil on baking sheets and freeze 1-2 hours. Remove to plastic freezer bags. Store in freezer. The leaves will turn black, but when used in cooking and sauces the flavor remains.
