A good sauce can provide the finishing touch
for a dish. There is a large number of ready-made sauces available, but
they are also very easy to make yourself. One of the most basic sauces is
the classic savory white sauce, which can be served as a simple topping
for vegetables or flavored with additional ingredients, such as cheese,
herbs, onions, or mushrooms, and served with pasta, fish, or poultry. A
basic fresh tomato sauce is widely used for pasta dishes, pizza toppings,
and vegetable dishes and it is worth making when ripe tomatoes are
available. It can be stored in the refrigerator for several days or can be
frozen for up to 6 months. Hollandaise sauce is another classic
accompaniment for fish and vegetables. Unlike the other sauces, it cannot
be made ahead, but it is available commercially. |
