Cranberry Relish Recipe

Cranberry Relish Recipe - 2 quarts


1 pound fresh cranberries

2 oranges, unpeeled and cut into eighths

2 red delicious apples, unpeeled and cut into eighths

1/3 cup sugar, or to taste


Wash cranberries, discard any that are soft or blemished. Put cranberries, oranges and apples through the medium blade of a grinder or chop in a food processor. Drain off excess juice. reserve. Add sugar, stir. Pour about half of the reserved juice into the relish (relish should be very moist, but not runny). Chill 24 hours. Keeps 2 to 3 weeks.
