Turkey, Tomato and Cucumber Recipe - 2 open-faced Sandwiches


2 slices black bread or pumpernickel rye

1/4 teaspoon safflower mayonnaise

mixed with 1/8 teaspoon fresh lemon juice

2 ounces turkey breast

1 rip tomato, thinly sliced

1/2 cucumber, thinly sliced

Black pepper

1/2 cup alfalfa sprouts


Spread bread with mayonnaise. Layer each slice with turkey, tomato and cucumber. Sprinkle with black pepper. Top with sprouts.
