Popovers Recipe - 8 popovers


2 eggs, room temperature

1 egg white, room temperature

1 1/4 cups skim milk

1 1/4 cups unbleached white flour

1/4 teaspoon salt

tub safflower margarine


In a mixing bowl, beat eggs and egg white with a rotary beater until lemon colored and frothy, add milk. Beat 1 minute. Add flour and salt, beat 1-2 minutes, or until batter is smooth and foamy on top. Generously grease popovers pans, individual custard cups or standard muffin pans with tub safflower margarine. Fill each cup 2/3 full with batter. Bake at 450oF 15 minutes. Reduce heat to  350oF bake 15-20 minutes, or until high, hollow and golden brown. Remove from oven. Insert a sharp knife into each popover to allow steam to escape. Remove from pan. Serve hot.
