Oatmeal Bread Recipe

Oatmeal Bread Recipe - 2 loaves


1 cup rolled oats

2 cups hot water

1/2 cup molasses

2 teaspoons olive oil

2 teaspoons safflower oil

1 1/2 teaspoon salt

1 package active dry yeast

1/4 cup warm water

6 cups unbleached white flour

tub safflower margarine


Pour rolled oats into a mixing bowl, add 2 cups hot water. Stir slightly. Let stand 10 minutes. Stir in molasses, olive oil, safflower oil and salt. Dissolve yeast in 1/4 cup warm water, add to oat mixture. Add flour and mix with a wooden spoon to form a soft dough. Remove to a heavily floured surface. Knead 3-4 minutes, or until smooth and elastic.


Place dough in a mixing bowl greased with tub safflower margarine. Cover with a kitchen towel. Let dough rise in a warm place until double in size, about 2 hours. Punch down. Divide in half. Turn into 2 loaf pans greased with tub safflower margarine. Cover and let rise until double in size, about 1 1/2 hours.


Bake at 350oF for 45 minutes or until bread pulls away from edges of the pans. Remove from pans and let cool on wire racks.
