Oat-Bran Muffins Recipe

Oat-Bran Muffins Recipe - 18 muffins

Ingredients:

1/4 cup safflower oil

3/4 cup brown sugar

1 cup unbleached white flour

2 teaspoons baking powder

1/4 teaspoon salt

1 cup 1% buttermilk

1 egg

1 teaspoon baking soda

1 cup oat bran

1 cup raisins

Method:

In a mixing bowl and with a wire whisk, combine safflower oil, brown sugar, flour, baking powder and salt. Add remaining ingredients and stir just until moistened. Fill paper-lined muffin cups 3/4 full with batter. Bake at 400oF for 20 minutes, or until toothpick inserted into center comes out dry. Remove muffins from tins and cool on wire racks.
