Oat-Bran Bread Recipe

Oat-Bran Bread Recipe - 2 loaves

Ingredients:

3 cups unbleached white flour

2 cups whole-wheat flour

1 cup rolled oats

1/3 cup wheat germ

1/2 cup oat bran

1 tablespoon salt

2 packages active dry yeast

1/2 cup warm water

1 1/2 cups water

1/2 cup molasses

2 tablespoons safflower oil tub safflower margarine

Method:

In a large mixing bowl, combine flours, oats, wheat germ, oat bran and salt. Dissolve yeast in 1/2 cup warm water, add to flour mixture. Add 1 1/2 cups water, molasses and safflower oil. Stir with a wooden spoon to form a soft dough. Knead on lightly floured surface until smooth and elastic. Place in mixing bowl greased with tub safflower margarine. Cover and let rise in a warm place 2 hours. Punch down; knead slightly. Cover and let rise 1 1/2 hours. Punch down.

 

Divide dough in half. Roll each half into a rectangle and place in a loaf pan greased with tub safflower margarine. Cover and let rise in a warm place 1 1/2 - 2 hours.

 

Bake at 375oF oven 30 minutes or until bread pulls away from edges of the pans. Remove from pan and let cool on wire racks.
