Cranberry Bread Recipe

Cranberry Bread Recipe - 1 loaf


1 1/4 cups unbleached white flour

3/4 cup whole-wheat flour

2/3 cup granulated sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon salt

2 tablespoons safflower oil

3/4 cup freshly squeezed orange juice

1 tablespoon grated orange peel

1 egg, beaten

12-ounce package fresh cranberries, coarsely chopped

tub safflower margarine


In a mixing bowl, combine flour, sugar, baking powder, baking soda and salt. Stir in safflower oil, orange juice, orange peel and egg, mixing just to moisten. Fold in cranberries. Pour into a loaf pan greased with tub safflower margarine.


Bake at 350oF for 45 minutes or until toothpick inserted into center comes out clean. Cool on wire rack for 15 minutes.  Remove bread from pan and continue cooling on wire racks.
