Hot Crab and Cheese Sandwich Recipe

Hot Crab and Cheese Sandwich Recipe - 4 open-faced sandwiches

Ingredients:

1/2 teaspoon fresh lemon juice

1/2 pound crabmeat

2 tablespoons minced white onion

2 tablespoons fat-free or light mayonnaise

2 English muffins, halved and toasted

4 tomato slices

4 non-fat cheddar cheese slices

Method:

Squeeze lemon juice over crab, toss with onion. Moisten with mayonnaise. Spread over toasted muffin halves. Place under a preheated broiler for 2-3 minutes, or until hot. Top each muffin with tomato and cheese. Broil 3-5 minutes or until cheese melts.
