Chicken Salad Sandwich Recipe - 3 SandwichesIngredients: 1 cup chopped cooked chicken 1/2 cup finely chopped celery 1/4 cup finely chopped water chestnuts 2 tablespoons fat-free or light mayonnaise 6 slices whole-wheat or pumpernickel bread 6 large lettuce leaves 6 ripe tomato slices |
Method: Combine chicken, celery, water chestnuts, and mayonnaise. Chill. Just before serving, spread 3 slices of the bread with filling, top with lettuce, tomato and an additional slice of bread. Cut sandwich in half and serve.
