Breakfast Pizza Recipe

Breakfast Pizza Recipe - 1 pizza

Ingredients:

1 Easy Pizza Crust

1 teaspoon olive oil

2/3 cup finely chopped white onion

1/2 teaspoon cumin

1/2 teaspoon fresh thyme

2/3 cup shredded part-skim mozzarella cheese

3 eggs

1/2 cup commercial tomato salsa

 

Salsa Cruda:

4 large ripe tomatoes, diced

2 cups finely chopped white onion

2 jalapeno peppers, chopped

1/2 cup fresh lime juice

3 tablespoons olive oil

1/2 teaspoon black pepper

1 teaspoon salt

Method:

Prepare pizza crust and bake 8 minutes according to instructions. Meanwhile, in a medium bowl, prepare Salsa Cruda by combining tomatoes, onion, jalapeno peppers, lime juice, olive oil, black pepper and salt, set aside. In a nonstick skillet, heat the olive oil. Add onion and saute 4-5 minutes or until onion is tender. Sprinkle with cumin and thyme. When crust is lightly browned, sprinkle with half the mozzarella cheese, then some of the diced tomatoes and onions from the Salsa Cruda. Break one egg over each third of the pizza. Prick yolk with a fork to break. Sprinkle remaining cheese over top. Bake in a 350oF oven 20 minutes or until eggs are cooked. (Use a pizza stone if available). Top each slice of pizza with Salsa Cruda, then with the commercial tomato salsa.
