Banana Currant Muffins Recipe - 18 muffins


1 cup unbleached white flour

1 1/4 cups whole-wheat flour

1/3 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/2 cup 1% buttermilk

1/2 cup safflower oil

2 ripe bananas, mashed

1 egg

1 cup currants


In a mixing bowl, combine flours, sugar, baking powder, baking soda, cinnamon and nutmeg. In a smaller bowl, combine buttermilk, oil, bananas and egg, add to dry ingredients. Stir with a wire whisk just until all ingredients are moistened. Fold in currants. Fill paper-lined muffin cups 3/4 full with batter. Bake at 375oF for 15-20 minutes or until toothpick inserted into center comes out dry. Remove muffins from tins and cool on wire racks.
