Apple Oat Bran Muffins Recipe

Apple Oat Bran Muffins Recipe - 18 muffins


3 cups oat bran

2 1/2 cups whole-wheat flour

1/2 teaspoon salt

2 teaspoons baking soda

2 eggs

1/4 cup molasses

1/4 cup olive oil or canola oil

2 cups apple juice concentrate

2 cups skim milk

2 1/2 cups chopped Granny Smith apples

1 1/2 cups raisins


In a small bowl, combine oat bran, whole-wheat flour, salt and baking soda, set aside. In a large mixing bowl, beat eggs, stir in molasses. Mix in olive oil, apple juice concentrate and skim milk. Gradually add flour mixture using a wire whisk. Mix ingredients just until moistened. Stir in chopped apples and raisins. Pour into paper-lined muffin pans. Bake at 350oF 20-25 minutes or until toothpick inserted into center comes out dry.
