Apple Coffee Cake Recipe

Apple Coffee Cake Recipe - 12 Slices


2 1/2 cups peeled and coarsely chopped apples

1 1/4 cups unbleached white flour

3/4 cup whole-wheat flour

1/2 cup plus 1 tablespoon brown sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 cup safflower oil

1/2 cup skim milk

1 egg


In a small bowl, toss apple with 1/2 cup of the unbleached white flour, set aside. In a mixing bowl, combine remaining unbleached white flour, whole-wheat flour, 1/2 cup brown sugar, baking powder, salt and 1/4 teaspoon of the cinnamon. Add safflower oil, milk and egg, stir with a wire whisk until dry ingredients are moistened. Stir in apples. Pour batter into a 10-inch round, nonstick baking pan. Combine remaining 1 tablespoon brown sugar and 1/4 teaspoon cinnamon, sprinkle over coffee cake. Bake at 400oF 30 minutes or until toothpick inserted into center comes out dry.
