Wild Rice Recipe

Wild Rice Recipe - 5 servings

Ingredients:

1 cup uncooked wild rice

4 cups Chicken Stock

7 large fresh mushrooms, thinly sliced

2 tablespoons finely chopped fresh parsley

1/2 ripe tomato, diced

Method:

Pour rice into a 6-quart saucepan. Cover with hot water, soak 1/2 hour. Drain. Add stock and heat to boiling (do not boil). Reduce heat. Cover and simmer 45 minutes. Stir in mushrooms. Remove from heat. Let stand 15 minutes. Stir in parsley and tomatoes.
