Tabbouleh Recipe

Tabbouleh Recipe - 6 cups


1 tablespoon olive oil

1 medium onion, chopped

1/2 cup chopped celery

1/2 pound fresh mushrooms, sliced

1 cup uncooked cracked wheat bulgur

1/2 teaspoon minced fresh oregano

1/4 teaspoon salt

1/4 teaspoon pepper

2 cups chicken or beef broth


Warm olive oil in a nonstick skillet over medium heat, add onion and celery. Cook 5 minutes. Add mushrooms and bulgur, cook, stirring constantly, for 10 minutes, or until bulgur is golden brown and vegetables are tender. Add oregano, salt, pepper, and broth. Cover and bring to a boil, reduce heat and simmer 15-20 minutes, or until broth is absorbed.
