Spicy Mexican Rice Recipe

Spicy Mexican Rice Recipe - 6 servings


1/2 teaspoon olive oil

1/2 cup finely chopped onion

1 cup chicken broth, preferably homemade

1 cup Mr and Mrs T. Bloody Mary Mix

1 cup uncooked long-grain Texmati or basmati rice


Heat olive oil in a nonstick skillet, add onion and sauté. In a medium saucepan, heat chicken broth and Bloody Mary mix to boiling, add onion and rice. Stir lightly. Cover, reduce heat, and simmer 15-20 minutes, or until rice is soft and moisture is absorbed.
