Shrimp Fried Rice Recipe

Shrimps Fried Rice Recipe - 6 servings


1/2 teaspoon olive oil

2 eggs

2 tablespoons water

2 green onions, chopped

3 cups uncooked basmati rice, prepared according to instructions on the box and cooled

1/2 pound cooked baby shrimp

1 tablespoon reduced-sodium soy sauce


Heat olive oil in a nonstick skillet, lightly stir eggs with water, pour egg mixture into skillet. Stir in green onion and scramble eggs with green onion. Just as eggs begin to set, stir in cooked rice. Gently toss eggs and rice until rice is coated and eggs are cooked. Toss with shrimp. Transfer to a serving dish. Sprinkle with soy sauce.
