Rice with Chilies Recipe

Rice with Chilies Recipe - 6 cups


1 tablespoon olive oil

1 cup long-grain white rice

1 small onion, chopped

3 cloves garlic, sliced

2 cups Chicken Broth

1/2 teaspoon salt

4-ounce can diced green chilies

1 small tomato, diced

1/2 cup freshly grated lot-fat Cheddar cheese


In a nonstick skillet, heat olive oil, add rice, onion and garlic, and stir-fry 6-8 minutes or until rice is lightly browned and onion is tender. Add chicken broth and salt, cover and simmer until most of liquid is absorbed. Add green chilies and tomatoes, and sprinkle with cheese. Cover and steam 2-3 minutes or until cheese is melted.
