Red Kidney Beans Recipe

Red Kidney Beans Recipe - 2 3/4 quarts


1 pound dry red kidney or pinto beans

2 stalks celery

1 large yellow onion, quartered

2 cloves garlic, peeled

1 teaspoon salt


Thoroughly wash beans. Drain. In a small stock pot, combine beans with 2 quarts water. Cover and bring to a boil. Remove from heat. Set aside 1 hour. Drain. Return beans to stock pot with 2 quarts fresh water, celery, onion and garlic. Cook 20 minutes. Add salt. Cook 15 minutes, or until beans are tender. Drain. Discard celery, onion and garlic.
