Creole Rice Recipe - 3 cupsIngredients: 1 3/4 cups Chicken Broth 1/2 teaspoon cayenne pepper 1/2 teaspoon ground cumin 1/2 teaspoon oregano 1/2 teaspoon black pepper 1/4 teaspoon white pepper 1 cup long-grain white rice 2 teaspoons olive oil 3 large cloves garlic 1 cup chopped white onion 3/4 cup diced eggplant (optional) 3/4 cup diced green pepper |
Method: in a saucepan, bring chicken broth to a boil, add cayenne, cumin, oregano, and black and white pepper. Stir in rice. Reduce heat, cover and simmer 20-30minutes or until broth is absorbed and rice is tender. Meanwhile, in a nonstick skillet, heat olive oil. Add garlic, onion and eggplant, if using and sauté 4-5 minutes or until onion is just tender and eggplant is softened. Add green pepper and cook 2-3 minutes. Toss with the cooked rice. |
