Brown Rice with Mushrooms Recipe

Brown Rice with Mushrooms Recipe - 5 servings


1 cup uncooked short-grain California brown rice

2 1/2 cups water

10 fresh mushrooms, thinly sliced

Salt and black pepper to taste


In a medium saucepan, bring rice and water to a boil. Reduce heat to low. Cover and cook 30-40 minutes, or until most of the water has evaporated. Quickly lift lid and sprinkle mushrooms over top of rice (do not stir). Replace lid. Cook 10-15 minutes, or until rice is tender and moisture is absorbed. Remove from heat. Let stand 5-10 minutes. Toss mushroom with rice. Season.
