Brown Rice and Mushroom Pilaf Recipe

Wild Rice, Brown Rice and Mushroom Pilaf Recipe - 7 servings


1 small onion, chopped

2 1/2 cups chicken broth or beef broth, preferably homemade

2 1/4 cups water

2/3 cup wild rice

1 cup long-grain brown rice

1/2 pound fresh mushrooms, sliced

2 tablespoons chopped fresh parsley


In a nonstick skillet, sauté onion in a small amount of the broth until tender. Transfer to a 5-6 quart saucepan and combine onion, remaining broth, water, wild rice, and brown rice. Bring to a boil. Reduce heat, stir once. Cover and simmer for 35-40 minutes, or until rice is tender and most of the moisture is absorbed. Add mushrooms, simmer 5 minutes longer. Sprinkle with parsley.
