Beans Ranchero Recipe

Beans Ranchero Recipe - 14 cups


4 dried pasilla chilies

1 1/2 cups water

1 medium tomato

1 cup chopped white onion

5 cloves garlic

1 teaspoon oregano

1 teaspoon salt

6 cups Beef Broth

6-ounce can tomato paste

2 fresh jalapeno peppers, seeded and chopped

1/4 teaspoon thyme

1 1/2 cups lentils

6 cups cooked seville rice



Soak dried chilies in 1 1/2 cups water 30-60 minutes or until soft. Pour chilies with soaking liquid into a blender or food processor, add tomato, 1/2 cup of the chopped onion, garlic and oregano and puree. Add salt. Set aside. In a stockpot, combine beef broth, tomato paste, remaining 1/2 cup chopped onion, peppers and thyme and bring just to boiling. Add lentils, reduce heat, cover and simmer 1 1/2 - 2 hours or until lentils are tender. Stir in hot-chili mixture. Simmer 10 minutes. Serve over Seville Rice.
