Barley with Pine Nuts Recipe - 4 cups


1 cup pearl barley

2 cups water

1 1/2 cups Beef Stock

1 1/2 cups Chicken Stock

2 tablespoons leek, white part only

1/3 pound fresh mushrooms, sliced

1/3 cup pine nuts

2 tablespoons chopped fresh parsley


Soak barley overnight in water. About 45-60 minutes before dinner, in a saucepan bring beef and chicken stocks to a boil. Add barley along with soaking liquid and boil 1-2 minutes. Add leek. Reduce heat, cover and simmer 30-45 minutes or until most of liquid is absorbed. Add mushrooms. Continue to simmer 5-10 minutes or until mushrooms are tender and liquid is absorbed. Stir n pine nuts and parsley.
